Easy Sourdough Dutch Baby (Fresh-Milled)

This easy sourdough Dutch baby pancake (fresh-milled) is a great way to make a quick and healthy breakfast for your family. It requires the most simple ingredients and will be a hit with the whole family! 

Ways to Serve Your Easy Sourdough Dutch Baby Pancake:

  • Serve with a variety of toppings – fresh berries, lemon curd, powdered sugar, brown sugar 
  • Rather than topping your pancake with fruit, pour your German pancake batter over your fresh fruit – apple slices, fresh blueberries, mixed berries, peaches, or fruit on hand
  • a scoop of ice cream 

You can make this recipe with sourdough discard or active sourdough starter.

What You’ll Need

  • 1 cup fresh-milled flour
  • 1 cup organic whole milk (or milk of choice)
  • 5 tablespoons of butter
  • 1/2 cup sourdough discard
  • Pinch of salt
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 5 fresh eggs
  • Pure Maple Syrup 

SUBSTITUTES 

  • Butter – Can be substituted with coconut oil. 
  • Fresh Milled Flour — All-purpose flour or bread flour (use 2 cups for all-purpose flour or bread flour OR mix your flour by using one cup fresh milled and one cup of flour of choice), or almond flour 
  • Organic Whole Milk – Raw Milk or Milk of Choice

EQUIPMENT NEEDED

  • Cast-Iron Skillet or Casserole Dish
  • Large Mixing Bowl

INSTRUCTIONS

1. Preheat oven to 425 degrees

2. Put your butter into your cast-iron skillet and place skillet into the hot oven to heat your butter. 

3. In a large bowl, mix your ingredients until well combined.

4. Pour your mixture into your hot skillet, over your melted butter, and place your skillet into your preheated oven to bake for 30 minutes or until you have golden, crispy edges. 

5. Top with your favorite toppings. We love to serve our Dutch baby pancake with fresh berries, a little sprinkled powdered sugar, lemon zest, and a little maple syrup. 

We never have leftovers, but if you do then store in an airtight container.
